1/2 cup fresh dill or curly parsley for the wreath
1 small red bell pepper, finely diced for berries
1/2 teaspoon smoked paprika for dusting
Instructions
Place your eggs in a single layer in a large saucepan and cover them with at least an inch of cold water. Bring the water to a full boil over high heat, then immediately remove the pan from the burner and cover it with a lid. Let the eggs sit in the hot water for 10 to 12 minutes. Once finished, transfer them to a bowl filled with ice water for at least 5 minutes to ensure they are easy to peel.
Gently peel the cooled eggs and slice each one in half lengthwise. Carefully remove the yolks and place them into a medium mixing bowl, setting the whites aside on a clean plate. Use a fork to mash the yolks until they are fine and crumbly. Add the mayonnaise, mustard, apple cider vinegar, salt, and pepper to the bowl, then stir until the mixture is completely smooth and creamy.
Use a small spoon or a piping bag fitted with a star tip to fill each egg white cavity with the yolk mixture. If you want a more professional look, piping the filling allows for a beautiful ruffled texture. Ensure the filling is distributed evenly among all 24 egg halves so they look uniform when arranged on the platter.
Select a large circular serving platter to act as the base for your wreath. Arrange the filled eggs in a tight circle around the edge of the plate, leaving the center empty. Take your fresh dill or curly parsley and tuck small sprigs underneath and between the eggs. The goal is to have the greenery poking out to mimic the texture of an evergreen wreath.
Carefully place your finely diced red bell pepper pieces or pomegranate seeds on top of the greenery and the egg filling to look like holly berries. Lightly dust the eggs with a tiny pinch of smoked paprika for a pop of color and a hint of smokiness. Serve immediately or chill until your guests arrive.
