Festive Holiday Deviled Eggs

Festive Holiday Deviled Eggs

  • Total Time: 25 minutes

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh chives, finely chopped
  • 1 tablespoon pomegranate seeds
  • 1/2 teaspoon smoked paprika
  • Fresh parsley sprigs for garnish

Instructions

  1. Place your eggs in a single layer in a medium saucepan and cover them with at least an inch of cold water. Bring the water to a full boil over high heat, then immediately remove the pan from the heat and cover it with a lid. Let the eggs sit in the hot water for 10 to 12 minutes to ensure the yolks are fully set but still creamy.
  2. While the eggs are sitting, prepare a large bowl filled with cold water and ice cubes. Once the timer is up, use a slotted spoon to transfer the eggs into the ice bath for at least 5 minutes. This stops the cooking process and makes the shells much easier to remove. Gently crack the shells and peel the eggs under cool running water.
  3. Slice each peeled egg in half lengthwise using a sharp knife. Gently pop the yolks out into a small mixing bowl and set the whites aside on a serving platter. Use a fork to mash the yolks until they are fine and crumbly, ensuring there are no large lumps left behind.
  4. Add the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to the mashed yolks. Stir the mixture vigorously until it is completely smooth and creamy. Taste the filling and add a pinch more salt or pepper if you feel it needs a bit more seasoning to reach your preference.
  5. Spoon the yolk mixture into a piping bag fitted with a star tip, or simply use a plastic storage bag with the corner snipped off. Pipe the filling evenly into the cavities of the egg whites. Sprinkle the tops with smoked paprika and finely chopped chives, then press a few pomegranate seeds and a tiny parsley leaf into the center of each egg for a festive finish.
