12 small pieces of fresh chives or small parsley stems
Instructions
Step 1: Hard Boil the Eggs Place your eggs in a single layer in a saucepan and cover them with at least one inch of water. Bring the water to a full boil, then immediately remove the pan from the heat and cover it with a lid. Let the eggs sit in the hot water for about 10 to 12 minutes. This method ensures the yolks are perfectly cooked without that unappealing green ring.
Step 2: Chill and Peel Transfer the cooked eggs to a bowl filled with ice water and let them sit for at least 5 minutes. The cold shock makes them much easier to peel. Once they are cold, gently crack the shells all over and peel them under cool running water. Pat the eggs dry with a paper towel once they are finished.
Step 3: Prepare the Filling Slice each egg in half lengthwise and carefully remove the yolks. Place the yolks in a small mixing bowl and mash them with a fork until they are fine and crumbly. Add the mayonnaise, mustard, smoked paprika, salt, and pepper. Stir everything together until the mixture is completely smooth and creamy.
Step 4: Fill the Egg Whites Spoon the yolk mixture back into the center of each egg white. For a neater look, you can use a piping bag or a plastic bag with the corner snipped off. Fill them generously so the tops are slightly rounded, resembling the shape of a pumpkin.
Step 5: Create the Pumpkin Texture Use a toothpick or the tine of a small fork to gently draw vertical lines from the center of the yolk filling down to the edges. This creates the characteristic ridges of a pumpkin. Do this carefully so you do not smudge the filling too much.
Step 6: Add the Stems Cut your chives or parsley stems into half inch pieces. Gently press one piece into the top center of each yolk mound to act as the pumpkin stem. Arrange them on a serving platter and keep them refrigerated until you are ready to serve.
